How to Make Chicken Crackling

1. Homemade chicken Chicken Crackling are easy to make at home in under an hour and require only a few ingredients. In a large bowl, mix chicken thighs with oil, onion powder, garlic powder, salt and pepper. Add additional flavors such as dried herbs or lemon zest if desired.

2. If you like a touch of spiciness, add chili powder or cayenne pepper. Place chicken thighs skin-side up on a baking sheet. Bake in a preheated oven for 35 minutes  until the skin is light brown on the chicken and just begin to chill the chicken thighs  for 10 minutes so you can remove the skin by sliding it off the thigh meat. Be careful not to burn your fingers!

3. Your skillet will be filled with rendered chicken fat. Don’t throw it away! We recommend putting the chicken fat in a small plastic container and storing it in the fridge. Schmaltz is one of our favorite cooking fats. Place the chicken skins skin-side up on a baking sheet and return to the oven for another 10 to 15 minutes.

4. Chicken Crackling should be golden brown and crispy before removing from the oven. Cool the chicken skins on a paper towel and serve at room temperature.
